Ishikari is a district within the large northern island Hokkaido of Japan. The Ishikari River is Hokkaido’s main river and along with the Sea of Japan, abounds with salmon and herring.

Hokkaido is generally cold most year-round and even in the summer months of July to early September, it is non-humid and cool. With bitterly cold winters of negative degrees, hotpots are the way to go!

The Origins of Ishikari Nabe

Ishikari Nabe has a miso soup base and generally constitutes salmon, cabbage and tofu. Local recipes sometimes include their own local produce, such as Hokkaido potatoes. The name ‘Ishikari Nabe’ came about in when it was popularized in Tokyo, making it more memorable.
